Here is an interesting story...

These papaya trees were planted around 2018. We expected them to protect biodiversity and act as an incremental income source. By definition, monoculture is not good.

However, we were never able to harvest the papaya fruits at scale for resale.

The toucan birds enjoyed the fruit the most. It also benefited beans, other native trees and the quality of our coffee. It just did not become a product itself.

Most of the natural drying process is exactly like the one in the video.

The coffee stays on drying beds for a few days - or weeks. Usually, there is no rainfall in July.

However, the 2026 El Nino leads to rainfall during the harvest period and changes this dynamic. The drying process takes longer and demands special infrastructure, such as raised beds or drying machinery. Therefore, quality control becomes even more important.
